Fall Challenge: No TV for a Week
{via a Cup of Jo} |
I'm a daily reader of A Cup of Jo for a couple years. I love her blog. Today she issued a fall challenge as part of her thoughts on happiness. She had an interesting perspective on happiness in her blog:
'"Happiness isn't being cheerful all the time," says John Sharp, a psychiatrist and Harvard Medical School. "It's being interested in things—finding out more about something, learning how to appreciate something better, incorporating something new that fits with what you already have."'
Each week she will issue a 'challenge'. "Think: learn to tell a great joke, write a handwritten letter, go see a movie by yourself. The following week, we'll regroup and share our experiences!"
This week's challenge: Not to watch TV for a week (or to cut back).
Good Luck!

Dinner Last Night : Zucchini Lasagna
{via Say Yes to Hoboken} |
{via Skinny Taste} |
Dinner last night was a Zucchini Lasagna that made by combining two recipes into one. I used the tomato sauce (without the meat) and techniques in the 'Skinny Taste' recipe (by grilling the zucchini) and the cheese layer from 'Say Yes to Hoboken'. Bon appetit!
Update: I forgot to mention I used low-fat cottage cheese instead of ricotta in my cheese mixture.
